Easy Peasy Tater Tot Casserole!

A few months ago, I had an itch for tater tot casserole and had not a CLUE on how to make it. I scrounged around on recipe websites to get an idea, and this is what I came up with. This was my first ever experimental recipe, and boy was it GOOD! Even my picky hubby went back for seconds! Worth a try for a quick and easy dinner! And plus it's Gluten-free, double win! (Don't mistake that for healthy *ahem*)

It's in the oven right at this moment for us to pack up for dinner! I'm drooling already.

Easy Peasy Tater Tot Casserole!


1 lb. ground beef
1/2 onion, chopped
1/2 cup milk
1 cup corn
1 lb. Velveeta cheese spread, melted
1/2 cup shredded cheddar cheese
1 bag of tots
salt and pepper to taste

Preheat oven to 350 degrees
Brown beef and onion together, drain fat, and put back on heat. Add in milk, corn, and 1/2 the Velveeta (8oz), salt and pepper to taste.. cook a few minutes until a creamy mixture. Pour into a 9x13 dish.
Pour remaining melted Velveeta on top. Layer tots on top, and sprinkle with cheddar cheese.
Bake for 20-25 minutes, until tots are golden brown.
